Dioro Baco Reserva Extra Brut [Sparkling]
Producer: Bodegas Escudero
Region: DO Cava

An excellent cava, made in Rioja. 100% chardonnay, free run juice, low temperature fermentation, 48 months on the lees before disgorging.​

Nice persistent bubbles. Apples & peaches, a hint of grape skins, bakery aromas, toasted almonds and a touch of citrus.
Crisp fresh acidity, pleasant creamy mouthfeel, fruit & nutty yeasty flavors. A serious bubbly, an excellent food wine.

Escudero has been making cavas since the 1950's. They also produce an extensive line of fine wines under the DOCa Rioja denomination.
This bottle's been in my cellar for a couple years, still showing well.
